After the quinoa is cooked, add to a bowl and chill in a freezer for 45 minutes. Latino blend - 2 medium garlic cloves, 4 seeded jalapenos, 1/4 of a Spanish onion, 5 chives, all the leaves off of one single cilantro bunch (refer to video), squeeze 1/4 of a lemon in a food processor. Remaining spice blend can be saved for the repeat of this recipe for faster cooking or for other dishes. In a bowl thaw 13 pieces of (51/60) size shrimp. Puck off the tails. Then cut them directly down it's spine into halves. Shrimp sauce - small pan, 1 tbls of olive oil, 1 tbls of Latino blend, add your shrimp, squeeze another 1/4 of a lemon, one small stem worth of oregano leaves, generous pinch of sea salt, 1/4 tsp of paprika, 3 tsp of salsa picante hot sauce, and 1 tbls of water. Cover with lid on low flame until a broth is made and a few stirs. (Try to use the chunks in the broth. The liquid broth will ruin your sushi roll.) Sushi roll - (SUSHI MAT SHOULD not be wet) (You may have to watch tutorials on how to roll sushi or practice it a few times. Sushi nori, 55-60% of applied quinoa spoon-spread a thin layer, sprinkle sesame seeds, narrow bed of lettuce pieces, very thin flat slices of avocado single layered, 1-2 thin slices of cucumber sticks, 2 thin slices of red bell pepper, apply sauce across sushi just enough to taste in every bite, then add 11 shrimps across sushi and are parallel to cucumber and red pepper and NOT on top of each other. Roll half-way, then add water to your fingertips and dab on sushi like licking a stamp. Cut sushi rolls.
